Hoping everyone had a good week!
Wow, cannot believe another week is over. Â We have been enjoying some semi mild weather for February which is nice. Â However, not nice for this girl that still cannot run. Â
I made it to the pool on Saturday morning for 30 minutes of pool running. Â I got there at 8:05 and there was another person swimming in the pool. Â I went about doing my thing. Â Then more people arrived. Â Thankfully I was done with my workout. Â It was fun but also tiring. Â Thanks to Marcia I have a plan that includes more pool running on Monday, Tuesday, and Thursday and a 2 mile run/walk on Friday. Â I am crossing my fingers and toes that my run is pain free. Remember, my goal is simply to finish the race and get my medal. Â
Other important stuff. Â My awesome wine opener broke. Â Maybe it isn’t so awesome since it broke? Â Well, I went to Bed, Bath, and Beyond to get another one because it is an important gadget to have in the kitchen. Â Am I right?
My mom made pozole and invited some family over to eat this delicious meal. Â Have you ever eaten pozole? Â If you get a chance, please do. Â There is white, red, and green and with chicken or pork. Â My mother makes it white with chicken. Â I add avocado, cabbage, lemon juice, oregano, raw onion, and chile. Â
Fridays are the best.  It is the end of the week and almost the weekend.  Plus, I get paid every two weeks on Friday and on said day we have breakfast.  Teachers sign up to bring an assortment of food and it is always delicious.  I had ‘molletes’ which are slices of bolillo, topped with beans, cheese and jalapeño peppers and grilled in the oven till the cheese melts.  There wasn’t any peppers so I added pico de gallo.  It was very good. Â
Friday ended with some wine at home. Â I stopped at Walgreens and bought 3 bottles. Â I am not picky. Â I like red, white, pink, etc.
On Saturday I received my box of NOW Foods. Â I found a bunch of recipes on their website that I’ve been meaning to try.
First I made Pumpkin Seed Brittle. Â It was so easy – just 3 ingredients and it came out really good. Â I did not have parchment paper but thanks to Google I found out I could use aluminum foil covered in cooking spray. Â
Then I made Buttermilk Pancakes. Â They were OK. Â Let’s just say that I need to do more work on the pancakes. Â How hard can it be to make them, right? Â I did like the maple syrup. Â It isn’t cheap but still very tasty.
On Wednesday it is a half day at school (students leave at 12pm but teachers stay till 3pm) and then no school on Monday next week. Â The plan is to go over President’s Day and have them write about several U.S. Presidents. Â A good reminder as to the reason we will be off on Monday.
The pool running was a huge part of my training for Big Sur. It was really effective. Let me know if you have any questions!

I wonder if I should try some pool running!! What kind of equipment do you use? I am already swimming twice a week but might be fun to mix it up a bit
I have an aqua fitness belt to help me float on the deep side of the pool but do not need it since the deepest part is 4 feet, 6 inches.
The pool running sounds interesting! I’ve never tried it, but it sounds like a solid workout.
Saturday was my first time but I’ve read of various people doing it when they were injured.
Marcia is a wise woman. I did months of pool running to stay marathon ready while injured. It will serve you well. If you have a iShuffle, clip it to a headband so you can listen to music. It helped me a lot. It sounds insane now, but I worked up to 2 hours and 45 minutes of it non-stop. I got a lot of funny looks but didn’t care. LOL. Enjoy your upcoming extra time off. I cannot imagine almost 3 hours of pool running. Wow -and nonstop!! Thanks for the music suggestion.
I haven’t had either of those dishes, but they look great! I always joke that I buy wine at the grocery store and beer at the wine store b/c I am much pickier about the beer I like. 😉 I decided I don’t have the patience to make pancakes.
I hear ya about the pancakes. I like going to restaurants to eat then there instead of making them home.
Pool running is a wonderful substitute for running, so it’s good to see you engaged in that. And all that food looks really tasty. I’ll bet the pancakes were probably delicious too. I’m hungry just thinking about them.
Wait ….what??? The Walgreens in your area sells wine??? Wth! How convenient…I’d be buying a bottle every trip I made, which is at least a couple of times per week!!
I did some pool running many moons ago and really have forgotten about …I’d love to incorporate it in my cross training every now and again.
